Recipe of the Month
ROASTED TOMATO SALAD
This is another delicacy from The Shared Table, and I know for a fact that it is favourite at many homegroup dinners and BBQs. The credit for this version goes to Merryn Nisbet.

- 12 large (1kg) Roma tomatoes

2 tblsp sweet chilli sauce

2 tblsp olive oil

2 cloves garlic (crushed)

1 tblsp cracked black pepper

1 tblsp salt
Halve tomatoes lengthways and place cut side up on a wire rack in a large baking dish.
Brush cut side of tomatoes with combined olive oil, chilli sauce and garlic.
Sprinkle with combined salt and pepper.
Bake uncovered in a moderate oven for about 1 hour or until lightly browned and softened.
Leave to cool and serve with dressing.
DRESSING

1 tblsp balsamic or red wine vinegar

1/3 cup olive oil
-
1 clove crushed garlic
-
1 tsp fresh chopped thyme
