ROASTED TOMATO SALAD

This is another delicacy from The Shared Table, and I know for a fact that it is favourite at many homegroup dinners and BBQs. The credit for this version goes to Merryn Nisbet.

  • 12 large (1kg) Roma tomatoes
  • 2 tblsp sweet chilli sauce
  • 2 tblsp olive oil
  • 2 cloves garlic (crushed)
  • 1 tblsp cracked black pepper
  • 1 tblsp salt

tomatoes Halve tomatoes lengthways and place cut side up on a wire rack in a large baking dish.

Brush cut side of tomatoes with combined olive oil, chilli sauce and garlic.

Sprinkle with combined salt and pepper.

Bake uncovered in a moderate oven for about 1 hour or until lightly browned and softened.

Leave to cool and serve with dressing. 

DRESSING

  • 1 tblsp balsamic or red wine vinegar
  • 1/3 cup olive oil
  • 1 clove crushed garlic
  • 1 tsp fresh chopped thyme
